School Information

Baking and pastry arts programs are available from numerous schools, the top ones offering a range of academic options. Let's take a look at some of the best colleges with these programs. The following four schools include a premier culinary institute with an international reputation as well as three well-established colleges. The first two schools offer both associate's and bachelor's degrees in baking and pastry, while Del Mar College offers a baking and pastry specialization within its associate's degree in the culinary arts, and Houston Community College offers three certificates and an associate's degree in baking and pastry arts.

The Culinary Institute of America

School Highlight: The Hyde Park, New York, campus of the Culinary Institute of America is the main campus of the school, where students become immersed in their culinary education.

CIA offers an associate's and a bachelor's degree in baking and pastry arts as well as a bachelor's degree in baking and pastry arts management. Enrollees can find courses in menu development, pastry creation, food safety, and quality control. Currently, CIA offers over 1,300 hours of hands-on learning in the 42 professional kitchens and bake shops on campus. In addition to Hyde Park, NY, the institute has campuses in Texas, California, and Singapore.

Johnson and Wales University

School Highlight: The baking and pastry arts food service management programs at Johnson and Wales University in Providence, RI, offer students the opportunity to develop their baking and pastry skills as well as learn what it takes to build and manage a business in the food service industry.

JWU's College of Culinary Arts offers associate's and bachelor's degree programs in baking and pastry arts as well as a Bachelor of Science degree that combines baking and pastry arts with food service management. Students can gain hands-on work experience at JWU-owned and operated restaurants, pastry labs, and banquet facilities.

Del Mar College, Corpus Christi, TX

School Highlight: Students in the culinary arts associate's degree program at Corpus Christi's Del Mar College take a cooperative education course comprising over 300 hours of work experience.

Del Mar offers an Associate in Applied Science in Culinary Arts degree with a specialization in baking and pastry. In addition to food preparation, the program includes training in hospitality, nutrition, and sanitation. Students also study cake decorating and complete a capstone project in advanced pastry creation. Del Mar also offers a cooking and baking certificate program that, like the associate's, features a 300-hour cooperative education course.

Houston Community College in Texas

School Highlight: Houston Community College offers degrees and certificates in baking and pastry arts as well as individual certificates for pastry cooks and bakers.

In addition to its baking and pastry A.A.S., Houston Community College offers the following certificates: Pastry Cook - Certificate Level I, Baker Certificate, and Baking and Pastry - Certificate Level II. Both the Pastry and Baker certificates are two semesters long and offer courses on bread, rolls, pies, and cookies, but the Pastry Cook Certificate offers cake decorating and the Baker Certificate offers pastry dough coursework.

The Baking and Pastry certificate is three semesters long and offers the courses in the other two certificates plus chocolates, advanced baking and pastry coursework, and a capstone project. The associate's program offers the same coursework as the baking and pastry certificate, a capstone, and general education courses.
