Although no colleges or universities in Hawaii offer holistic nutrition programs, students can study nutrition through a bachelor's, master's or doctoral degree at the four-year, public University of Hawaii at Manoa (UH Manoa). Undergraduates have four track options available, including one in dietetics, while graduates have the option of choosing from ten concentrations. Master's degrees students must earn work-study credit as a teaching assistant and pass two tests to earn their degree. Doctoral degrees focus on research.
The University of Hawaii at Manoa
UH Manoa, located in Honolulu , was established in 1907 as the first school of the public University of Hawaii System. Through the school's Department of Human Nutrition, Food and Animal Sciences, the university offers programs at the bachelor's, master's, and doctoral levels.
The Bachelor of Science in Food Science and Human Nutrition program offers four tracks from which to choose. These include dietetics, food science, pre-professional nutrition, and sports and wellness. The dietetics track option, recognized and accredited by the American Dietetic Association (ADA), is the only such program in the state. Graduates from the dietetics track can take the steps needed to earn the RD credential.
The 30-credit Master of Science in Nutritional Sciences program covers research methodology and the scientific basis of nutrition. Students can choose from 10 concentration areas, such as nutritional epidemiology, diet and cancer, obesity, sports nutrition, and nutrition education. A thesis or non-thesis option is available, but requirements for students taking either option include one semester as a teaching assistant and passing two exams before graduation.
The Ph.D. in Nutrition program allows students to apply their research skills toward the fields of nutrition science, human health, agriculture, and public health. They also learn to design new products, approaches, and techniques in these and related fields. Students can choose from 10 concentrations, including obesity, mineral nutrition and toxicology, diet and cancer, nutritional biochemistry, clinical nutrition, and community and global nutrition.
Students who want to become a Registered Dietician (RD) must first graduate from an accredited program and complete a required 1,200-hour internship. This will qualify them to take the Dietetic Registration Examination.
