- Name the six nutrient classes and their functions. List steps in the scientific method and differentiate between reliable sources of nutrition information and nutrition myths.
- Assess guidelines for a healthy diet plan and explain how to determine an individual's nutritional needs. Identify factors that influence dietary choices.
- Review the structure and function of carbohydrates. Get details on lactose intolerance, blood glucose regulation and diabetes. Explain what happens when too many carbohydrates are consumed.
- Determine the four classes of lipids and examine saturated, monounsaturated and polyunsaturated fats. Outline the classes of lipoproteins and the types of cardiovascular disease.
- Describe how proteins are formed and differentiate between essential and nonessential amino acids. Discover the primary functions of protein in the human body and list its sources. Explain how to create a vegetarian diet plan that fulfills the body's need for protein.
- Identify the properties of water and assess its purpose in the body. Learn about healthy water intake and output, dehydration and water safety concerns.
- Explain conditions influencing the absorption and retention of various minerals. List food sources for minerals and examine health conditions associated with minerals, such as iron deficiency and anemia.
- Understand the importance of vitamins and determine their sources. Examine the risks and benefits of vitamin and mineral supplements.
- Describe the anatomy of the upper and lower gastrointestinal tract, mouth, throat and stomach. Review the functions of the large intestine, gall bladder and pancreas. Explain how nutrients are absorbed in the small intestine.
- Survey the digestion processes for carbohydrates, proteins, lipids and fiber. Understand how nutrients are absorbed in the bloodstream and lymphatic system. Identify common digestive problems.
- Identify synthesis, decomposition, enzymatic and redox reactions. Trace the steps in cellular respiration, the glycolysis pathway and the electron transport chain.
- Define anabolism and catabolism. Differentiate between LDLs and HDLs and describe what happens during protein synthesis and alcohol metabolism.
- Discuss the gross anatomy of the urinary system, including the bladder and urethra. Name significant kidney structures and the layers that make up human skin.
- Evaluate the obesity epidemic in the U.S. and the risks associated with being overweight. Recognize factors that contribute to obesity and get strategies for maintaining a healthy weight. Outline methods for determining energy use and body fat content.
- Investigate causes of eating disorders. Evaluate treatment methods for anorexia, bulimia, binge eating and night eating. Scrutinize cultural factors that contribute to eating disorders.
- Explain the benefits of regular physical activity and the different components of exercise programs. Identify methods for preventing fitness injuries, meeting caloric needs and staying well hydrated while training.
If you're new to the field of nutrition, this is the course for you. All of the basic nutrition principles are covered here, so there's no need to take any prerequisites.
