Lamar University

Lamar University in Beaumont has an online Master of Science in Nutrition degree program, which can be completed in about 15 months. This 36-credit hour degree program features leveling courses in anatomy, chemistry, and statistics. You also take core courses in weight management, vitamins and minerals, and eating disorders. While there is no thesis requirement for this program, you must complete a final capstone class in nutrition that leads to a project focused on the topic of community nutrition needs.

Texas Woman's University

You are required to take 5 core courses in metabolism, experimental design, and molecular nutritional sciences. Then, your 5 elective courses depend on your chosen concentration with disease prevention and health promotion courses in nutrition and obesity, and biochemical and functional nutrition courses in nutrigenomics and immunology. This is a 30-credit hour program that has no thesis or capstone requirement, but it does include a graduate seminar.
