Aspiring Florida students of baking and pastry arts may find few specialized programs in the field. However, several culinary arts certificate and associate's degree programs can be found that offer courses and emphases in baking and pastry arts. In addition to courses, these programs may also provide students with an opportunity to participate in laboratory work and internships or co-op experiences.

Some certificate program graduates might transfer to related associate's degree programs. Likewise, associates level program graduates might be able to transfer to bachelor's degree programs. Profiled below are ten of the largest 2- and 4-year colleges and universities offering baking and pastry arts-related programs in Florida. The programs include culinary arts, baking and pastry arts, culinary management, baking and pastry arts and food service management, a chef's apprenticeship, commercial foods, and culinary arts, and baking and pastry management.


Eastern Florida State College

Eastern Florida State College is located in Cocoa and offers a commercial foods and culinary arts certificate. The program is 40 weeks and requires that students complete 1,200 clock hours. Students are required to take baking, pastry and dessert courses. Other courses cover topics in food production, catering, and regional cuisine.

Daytona State College

Located in Daytona Beach, Daytona State College has a culinary management certificate program with a baking and pastry specialization that can be completed in three semesters. Students in the program take courses in cakes, desserts production, chocolate and artisan breads. The 600-clock-hour program also includes a course in wholesale bakeshop production and retail bakeshop production.

Florida State College at Jacksonville

Students at the Florida State College at Jacksonville have the option of pursuing the culinary arts certificate or culinary management associate's degree. The culinary arts certificate is 35 credits and features courses in baking, food production, culinary nutrition and international foods, as well as a culinary management internship. Graduates of the certificate program can transfer credits into the culinary management associate's program, which includes general education and management courses.

Hillsborough Community College

Hillsborough Community College - Dale Mabry Campus is located in Tampa and features three culinary programs. The chef's apprentice certificate and culinary arts certificate both feature a course in baking. The 35-credit culinary arts certificate program requires additional coursework in food preparation, food purchasing, food and beverage control, and nutrition. The third program is a culinary management associate's degree program that includes three practicum courses.

Johnson & Wales University - North Miami

Johnson & Wales University is located in North Miami and offers an associate's degree in baking and pastry arts and a bachelor's degree in baking and pastry arts and foodservice management. The baking and pastry arts associate's degree program teaches students about baking bread, cakes, desserts, and pastries. Students also complete an internship in baking and pastry. Graduates of the baking and pastry arts associate's degree program can continue their education at the bachelor's degree level. This program provides students with the management and leadership skills necessary to oversee production in a bakery or pastry shop.

Manatee Technical College

Manatee Technical College is located in Bradenton and offers a baking and pastry arts certificate program that can be completed in six months. Students are required to complete 600 hours of courses in bread, pastries, cake decorating and chocolate applications. The coursework is broken down into 300 hours of pastry cook and 300 hours of pastry baker courses.

Orange Technical College-Mid Florida Campus

Located in Orlando, Orange Technical has a commercial foods and culinary arts certificate program. The program requires that students complete 1,200 hours of coursework. Students gain training in cooking and baking, bakery goods, dessert preparation, nutrition principles, and management skills. The program also includes 300 hours of food preparation coursework in leadership, teamwork, food science principles, safety and foodservice.

Pensacola State College

Pensacola State College offers a certificate program in culinary arts through the Culinary and Hospitality Management Department. The 35-credit culinary arts certificate includes two baking courses, as well as courses in culinary techniques, culinary production, catering and nutrition. The school also offers a culinary management associate's degree program that includes a co-op program or internship through the Escambia County or Santa Rosa County articulation.

Robert Morgan Educational Center and Technical College

Miami-based Robert Morgan Educational Center and Technical College offers a culinary arts program that includes coursework in baking. The curriculum includes coursework in desserts, bread, cakes, pies, meats, nutrition, and sanitation. The 1,200-hour program includes sections in food preparation, cook and restaurant, head cook and food service management.

Valencia College

Located in Orlando, Valencia College has a baking and pastry arts certificate program and baking and pastry management associate's degree program. The baking and pastry arts certificate is 35 credits, while the associate degree is 64 credits. Both programs feature coursework in baking ingredients and technology, specialty bread, cookies and tarts, cakes and pastries, contemporary desserts and pastry production. Students also complete an internship.
