These programs lead to certificates and associate's degrees, and they often include didactic courses, labs, and internships. Graduates are prepared for careers as chefs, cooks, and bakers.

Central Oregon Community College

Central Oregon Community College is located in Bend and offers culinary arts and baking and pastry arts programs through the Cascade Culinary Institute. Students can choose from several certificates and associate degrees in the field.

Students can pursue a 47-credit certificate or a 92-credit associate degree in baking and pastry arts. These programs teach students about chocolate decor, wedding and specialty cakes, artisan breads, frozen desserts, tarts and candies. Students can also receive cooking instruction through culinary arts certificate and associate degree programs. Culinary arts courses cover kitchen operations, healthy cooking, menu composition, baking and pastry principles, butchery and cost control.

Lane Community College

Located in Eugene, students at Lane Community College can take cooking classes through a certificate program and a degree program. Students enrolled in the baking and pastry certificate program are required to complete courses in beginning, intermediate and advanced baking and pastry arts. The culinary arts and food service management associate degree program features courses in cooking theories, nutrition, taste and flavor concepts, buffet and banquet planning and menu management. Graduates of the degree program can pursue the Certified Culinarian credential offered by the American Culinary Federation.

Linn-Benton Community College

Linn-Benton Community College is based in Albany, and students at the school can pursue an associate degree in culinary arts. In addition to general education requirements and a culinary arts practicum, students also complete coursework in advanced cooking management, meats, soups and sauces, menu planning, sanitation and buffet planning.

Southwestern Oregon Community College

This Coos Bay college offers an associate degree in both baking and pastry arts and culinary arts. The programs are offered through the Oregon Coast Culinary Institute, which is accredited by the American Culinary Federation. The baking and pastry arts program consists of 91 credits and features courses in nutrition, chocolate, contemporary cakes, retail baking, frozen desserts and wedding cakes. Students enrolled in the culinary arts associate degree must complete 90 credits and take courses in professional cooking, food preparation, menu planning, nutrition and cost control. Both programs include an externship.

Tillamook Bay Community College

Based in Tillamook, this school offers three culinary arts programs. The culinary arts career pathway certificate program is 34 credits and teaches students about culinary theory, cost control and food service management. Students also have the option of enrolling in the 1-year culinary arts certificate program. This is a 53-credit program that covers topics in sanitation, customer service, culinary theory and foodservice purchasing. The culinary arts associate degree program consists of 90 credits and consists of general education requirements, culinary arts courses and two practicums.
