California State University Los Angeles (CSULA) is located about two miles east of Chinatown. The university offers both certificate and degree programs in nutrition science.
Certificate in Alternative Nutrition
CSULA's School of Kinesiology and Nutritional Science offers a certificate in alternative nutrition. This 18-credit certificate program includes topics such as medicinal and functional foods for disease prevention, herbalism and alternative nutrition. Students also complete two elective courses. Their options include ethnic and cultural cuisine, nutrition science for the adult population, pediatric nutrition science, nutrition for well-being and nutrition of healthy aging.
Bachelor of Science in Nutritional Science
This undergraduate program provides a foundation in traditional and alternative nutrition, dietetics and food science. A portion of the bachelor's degree curriculum is dedicated to the study of holistic nutrition. In addition to foundation courses, such as chemistry, microbiology, psychology and sociology, participants complete core courses on topics such as experimental food elements, cultural and ethnic foods, food service management and advanced nutrition.
Master of Science in Nutritional Science
This graduate program in nutritional science qualifies students to be professionals in the area of nutrition, dietetics and food service, while also preparing them for doctoral study in this field. The undergraduate and graduate degree programs in nutritional science do not focus solely on holistic nutrition. Upon completion of clinical education and courses required for both the master's program and the CDP or DPD program, students can take the registered dietitian examination. Required courses include medical nutrition therapy, advanced nutrition, experimental foods and laboratory study. This program also offers advanced courses on eating disorders, epidemiology and food science.
