University of Hawaii at Manoa

The University of Hawaii at Manoa is a 4-year, public school designated by the Carnegie Foundation as a high-level research institution. The College of Tropical Agriculture and Human Resources houses the university's nutrition programs at the undergraduate and graduate levels.

Bachelor of Science in Food Science and Human Nutrition

This undergraduate program is science-oriented, and students can choose from concentrations in sports wellness, pre-professional nutrition and food science. A Bachelor of Science in Dietetics in another option designed for students looking to become registered dietitians (RD). Students must complete an internship spanning 1,200 hours. Program graduates can then take the Commission on Dietetic Registration's national registration examination. The pre-professional nutrition option allows students to study various areas of nutrition, foods and sciences to prepare for professional programs or advanced research in nutrition, medicine, dentistry and other health-related fields.

The food science track concentration includes coursework focusing on food chemistry, safety and regulation, sanitation, microbiology and engineering. Students who select this option can pursue careers in food processing, regulation and business. Students who choose the sports and wellness option can take courses in exercise and sports nutrition, exercise physiology and musculoskeletal anatomy. Program graduates can seek employment at health clubs, fitness centers and other exercise-related fields.

Master of Science in Nutritional Sciences

The program examines the scientific components of nutrition, health and fitness. Students may perform research on the link between diet and cancer, international and community nutrition, nutritional biochemistry, obesity, sports nutrition and nutritional epidemiology. Students typically can complete the program in 2-3 years. Students are prepared for careers in education, government, research and fitness.

Doctor of Philosophy (Ph.D.) in Nutrition

Students in this program must pass qualifying and comprehensive examinations, as well as complete and defend a research-based doctoral dissertation. Ph.D. candidates must participate in a teaching experience and complete courses in biostatistics, research skills, molecular biology, bacterial genetics, biotechnology and public health. The program offers specialized tracks that include nutritional biochemistry, sports nutrition, diet and cancer, clinical nutrition, nutritional epidemiology, obesity, nutritional product development and functional foods. Students can start the Ph.D. program with either a bachelor's degree or a master's degree.
