Bunker Hill Community College

The largest community college in Massachusetts, Bunker Hill Community College is a public school that offers weekend programs, online courses and various areas of study. The culinary arts department has certificate and associate degree programs for individuals interested in pastry making and other types of culinary training.

Pastry Arts Certificate Program

The 29-credit pastry arts program prepares students to work in bakeries or pastry shops. The 2-semester program runs from September through May.

The curriculum includes courses in food service sanitation and menu design, as well as an introductory culinary arts course. Students develop pastry-making skills by completing courses in baking principles, cake decorating, international and classical pastries and advanced desserts and pastries. Credits from this program can be transferred to the school's associate degree program in culinary arts.

Associate in Science in Culinary Arts

This associate degree program reflects the standards set forth by the American Culinary Foundation. Two classes are specifically related to pastry making and baking. The basic baking course teaches students how to prepare desserts, pastries and breads. Students also learn about weights and measures, general baking techniques and the use of specialized equipment in various types of baking. In the advanced desserts and pastries course, students move past the basics to study cake decorating, dough laminating, filling and advanced pastry techniques.

Students may need to purchase supplies, uniforms and equipment. To obtain hands-on training, students participate in an internship and in the operation of an on-campus restaurant.

Associate in Science Baking and Pastry Arts Option

This 65-credit program looks more specifically at the baking arts in the culinary field. While students will still complete general education courses, there are several concentration-related courses that will be required, along with a pastry arts internship. Students will study the science of baking to better understand how to bake and alter recipes in addition to topics covered in the certificate program.

Newbury College - Brookline

Newbury College is comprised of three schools and offers small class sizes and a student-to-teacher ratio of 12:1. Baking and pastry programs are available through the Roger A. Saunders School of Hotel & Restaurant Management and the Adult and Professional Studies program.

Pastry Arts Certificate

The pastry arts certificate is offered through the school's Adult and Professional Studies program. To complete the required 18 credits, participants attend a practical kitchen class on weekends and take the rest of their courses online. Students learn pastry making and decorating techniques through the cake decorating and desserts bakeshop courses. Additional training can be found in the baking operations and classical and contemporary pastry making courses. The courses in this program can be applied towards related associate or bachelor's degree programs offered at Newbury.

Associate in Applied Science in Baking and Pastry Arts

The associate degree program in baking and pastry arts requires two years and a summer session. The curriculum includes culinary and a few general education courses. Students learn how to make pastries and operate a pastry business. Course topics include chocolate and sugar confectionary, cake artistry, bakery operations and basic cooking skills.

A 2-part bakeshop course teaches students the art of making breads, rolls and fancy desserts. During the summer semester, students complete a 300-hour, hands-on internship which can help them prepare for full-time employment in the industry.

North Shore Community College

Located less than a half-hour drive from downtown Boston, North Shore Community College is a public school with three campus locations and various academic options, including short-term career certificate, associate degree and workforce development programs. Culinary arts and food service programs include an associate degree program with three pastry-making classes.

Culinary Arts and Food Service Certificate

This program is aimed at students who already hold degrees, as well as those interested in focusing solely on the culinary arts. The curriculum includes lecture and laboratory classes and an internship to help prepare students for employment in the field. Students will complete 27 credits in cooking techniques, food and beverage cost control, and bakeshop management.

Associate in Applied Science in Culinary Arts and Food Service

While learning about the food service industry, students can take two progressive cooking techniques courses, each worth six credits. Students gain an understanding of restaurant operations and the nutrition and cost control principles behind restaurants and banquet operations.
